Overall, it’s not heavily marbled, and it does not have a fat cap, so it is not overly fatty. But it offers enough marbling to make it the right side of flavorful. Typical Uses WebThe Porterhouse is the bigger version of a T-bone, so even if you don't like the strip side, you'll still have a nice filet (plus leftovers). The fat on the strip side is what makes that meat more flavorful. It's usually recommended to go medium rare on a nice steak, but if that's too pink for your tastes medium is fine.
